Let’s talk about chicken. I’ve said it before but I do my best to feed my family healthy foods that I feel good about.
I’ve become so much more aware of what we’re eating since having Julia. Her little body is a blank slate and I only want to feed her the best ingredients.
I’ve made One Dish Ranch Chicken & Veggie Bake in the oven, but I decided I wanted to give my slow cooker some use for this version. I love that you make your entire dinner in one dish, it’s healthy and simple.

Ingredients you’ll need
Below is a list of the ingredients you’ll need to gather to make this recipe, why you need them, and possible substitutions. Scroll all the way down for the full recipe card with measurements.
Jump- Chicken – I like to use boneless, skinless chicken breasts.
- Green Beans – I like to use fresh green beans. Frozen will work as well.
- Red Skin Potatoes – Scrub them, leave the skins on, and cube them.
- Lemon Juice – Fresh squeezed lemon juice is what I prefer but we always have bottled lemon juice on hand in case we ran out of lemons.
- Olive Oil
- Montreal Chicken Seasoning – This is one of my favorite blends – it includes garlic, salt, onion, pepper, paprika, and a few other things.
- Lemon Pepper – My favorite. I put this on everything.
- Salt & Pepper
- Onion Powder
- Minced Garlic – Two cloves or you can use minced garlic that comes packed in oil.
- Butter – I drizzle a little seasoned butter over the veggies, but this is optional.

If you need a new slow cooker, my husband got me this Hamilton Beach Set ‘n Forget It for Christmas & it’s so nice – I love being able to set it in the morning then it automatically switches to warm when it’s done.
So convenient since I’m gone from the house for 10+ hours during the day which is much longer than most slow cooker dishes need to cook.
How to Make Crock Pot Chicken Potatoes and Green Beans

Jump- Step One: Whisk up the sauce in a medium bowl – lemon juice, olive oil, chicken seasoning, lemon pepper, salt, pepper, onion powder, and minced garlic.

- Step Two: Pile the cubed potatoes and green beans into the slow cooker, adding the chicken in the middle, and drizzle melted butter over the veggies then the sauce evenly over the top.

- Step 3: Cover and cook on HIGH for 3-4 hours or LOW for 4-6 hours, or until the chicken reaches 165°F internal temp and the potatoes are fork tender.

Every slow cooker runs differently. Times given are a general recommendation and should be tested in your own slow cooker and adjusted as needed.
Can you put raw chicken in the slow cooker?
Yes, you can put raw chicken in the slow cooker.

How long does chicken take in the slow cooker?
If you’re cooking your chicken on LOW, it should take 4-5 hours to cook in the slow cooker.
If you set your slow cooker to HIGH, your chicken should be done in about 2.5-3 hours.
I always recommend using a meat thermometer to make sure you hit the safe temp of 165°.

Slow Cooker Chicken Potatoes and Green Beans Recipe

- 1.5 pounds boneless skinless chicken breasts trimmed
- ½ pound fresh green beans trimmed
- 1 pound red skin potatoes cubed
- ⅓ cup lemon juice
- ¼ cup olive oil
- 1 teaspoon Montreal chicken seasoning
- 1 teaspoon lemon pepper
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon onion powder
- 2 cloves minced garlic or 1 tsp minced garlic
- 3 Tablespoons salted butter optional
Instructions
- In a medium bowl, add the lemon juice, olive oil, chicken seasoning, lemon pepper, salt, pepper, onion powder, and minced garlic. Whisk together.1/3 cup lemon juice, 1/4 cup olive oil, 1 teaspoon Montreal chicken seasoning, 1 teaspoon lemon pepper, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon onion powder, 2 cloves minced garlic
- To one side of the slow cooker, pile in the diced potatoes.1 pound red skin potatoes
- On the other side, pile in the green beans.1/2 pound fresh green beans
- Drizzle 3 Tablespoons of melted butter (either salted or salt it yourself) over the potatoes and green beans.3 Tablespoons salted butter
- Layer the chicken breasts in the center.1.5 pounds boneless skinless chicken breasts
- Pour the lemon juice mixture evenly over the chicken, potatoes, and green beans.
- Cover and cook on HIGH for 3-4 hours or LOW for 4-6 hours without opening the lid.
Notes
- Frozen or fresh green beans can be used.
- Cook on LOW for 4-5 hours or on HIGH for 2.5-3 hours.
- Always check the chicken’s internal temperature — it should reach 165°.

Can you cook pork green beans and potatoes in place of chicken
That should work, but I haven’t tested it.

In your comments before the recipe you say to cook chicken on low 4-5 hours but in the recipe you say on low it should cook 7-8 hours. Which time is correct?
The comments above are referring to chicken in general in the slow cooker. The times in the recipe card are referring to this particular recipe that includes potatoes. Each slow cooker cooks differently but 4-6 hours on LOW should work, just make sure your chicken hits 165° and the potatoes are fork tender.
Can you use frozen chicken breast? How would that affect the cooked times?
I always recommend starting with thawed chicken in a slow cooker.

Can these ingredients be put in a thick freezer bag as a freezer meal, thawed and then cooked in the crock pot?
I haven’t tried this yet, but I would like to know if if can be done in the insta pot? that has a setting for the slow cooker.
I believe so but I’ve been told the slow cooker function of the IP doesn’t work as well/the same.
I don’t have an Oval shaped Slow Cooker. It’s round. Not sure if this will work or not. But, what I did was put the Chicken in the center, potatoes circled around the chicken. Then poured 1/2 the mixture on both. Then added the green beans and poured the rest of the mixture on the beans and where ever else it landed. I’m hoping this will work. Let you know after dinner. Just wondering how anyone else did it with a Round Cooker.
That should be fine, cook time may just be a bit different since it’s a different size.
Kathy, I cooked mine in a round 6 quart crockpot on High for 5 hours and the dish came out great! I put the chicken, seasoned with the Montreal seasoning, on the bottom, the green beans and potatoes and chopped onions on top. Poured the lemon juice mixture on top, covered and cooked until the time was up! My family loved it!
What about using frozen green beans?

Hello, do you think the children could be browned first , before putting in crockpot? Or would it make it dry?
Please don’t brown the children 😉 Yes, you can, browning the chicken actually locks in moisture.
Will the green beans over-cook at 7 hours?
You know your slow cooker best – I just updated the suggested times because newer slow cookers seem to run hot & cook faster. I think 7 hours is too long (for the chicken & the veggies) in most crockpots.
Made this recipe! I did not have red potatoes, so I used carrots and red pepper instead and served over rice. Husband approved and he doesn’t like anything.

I’m glad you like it! It really depends on the chicken (some give off more liquid than others) but I’d do a bit of chicken broth, if you have it.
