This butter pecan snack mix is the perfect blend of sweet, salty, and crunchy! Made with buttery caramel-coated pecans and cereal, it’s an easy treat for holidays, parties, or anytime snacking.
Preheat the oven to 250°F and line a lipped baking sheet with parchment paper and lightly spray with non-stick spray. Set aside.
In a large mixing bowl, combine the Crispix and pecans; set aside.
9.6 ounces Crispix cereal, 2 cups pecan halves
In a medium saucepan, add the brown sugar, corn syrup, and butter. Heat over medium heat until the mixture comes to a boil, stirring often.
½ cup light brown sugar, ½ cup light corn syrup, ½ cup butter
Remove the sugar mixture from the heat and add the vanilla extract, then stir in the baking soda until fluffy.
1 teaspoon vanilla extract, ½ teaspoon baking soda
Pour the mixture over the Crispix mix and gently toss to fully coat.
Spread the mixture into an even layer onto the prepared baking sheet and bake, stirring every 20 minutes, for 1 hour.
Once the hour is up, remove the pan from the oven. Let sit at room temperature for about an hour to cool and then break up any large pieces, if necessary.
Notes
Store the snack mix in an airtight food storage container at room temperature for up to 1 week.
I like to use salted pecans & salted butter because I like a strong salty to sweet contrast, but you can use unsalted for either or both.
